The time I spent overseas made me realize how much I truly loved farming and the rural lifestyle,\u201d explains the 25-year-old entrepreneur, \u201cwhen I returned, I decided to register at L\u2019Institut de technologie agroalimentaire of Saint-Hyacinthe and to develop my own enterprise on our family farm.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10496\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/IMG_3387.jpg\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>Gabriel\u2019s parents own a commercial orchard, but he preferred to pursue a project dear to his heart ever since he was a teenager: Raising pigs.<\/p>\n<p>Gabriel explains, \u201cBesides the orchard, we\u2019ve always had horses, chickens and a few pigs. Every summer, from the age of 10 to 15, I would raise about a hundred chickens and four or five pigs. I would \u201cfinish\u201d the pigs by feeding them apples from our orchard and then I would sell them to customers in the area. Three years ago, when I decided to return to the farm, I told myself this is the project I was going to develop. It\u2019s a seasonal production, which gives me time to relax during the winter. It was important for me not to feel trapped by my enterprise.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10493\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/IMG_3343c.jpg\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>Another important aspect for the young farmer is the well-being of his animals, it\u2019s central to his approach. Gabriel\u2019s 90 Yorkshire and Duroc cross-breeds are raised outside and move about freely in a vast five-acre pasture that used to be part of the family orchard. The pigs feed on grain, grass, roots and insects they find as they forage for food in their enormous playground. They arrive from another farm near Notre-Dame-de-Stanbridge in June, when they\u2019re seven or eight weeks old. In early September, a couple of weeks before leaving for the slaughter house, he feeds them apples, 800 pounds daily!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10494\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/IMG_3395c.jpg\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>\u201cThey love apples,\u201d says Gabriel. \u201cAdding them to their diet doesn\u2019t make the meat taste like apples, but it does, however, affect its flavour, along with all the other food the pigs eat and all the exercise they get in their great outdoor space. They even develop muscles in their neck, which they normally don\u2019t, when they\u2019re raised in a pigsty.\u201d<\/p>\n<p>Although Gabriel sells whole carcasses to such renowned restaurants as Foxy, Joe Beef and Hoggan &amp; Beaufort in Montreal, his main market is very local. His customers can buy either entire or half pigs with their different parts cut, prepared, frozen and vacuum-packed by local butchers.<\/p>\n<p>Gabriel emphasizes \u201cIt\u2019s important for me to honour the whole animal.\u201d<\/p>\n<p>&nbsp;<\/p>\n<h2><strong>From Pigs to Mushrooms<\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10489\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/IMG_2232c.jpg\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>In the future, Gabriel doesn\u2019t think he will be expanding his pig production any further. He\u2019s thinking about perhaps eventually transforming his enterprise, but for now he\u2019s concentrating on La Pin\u00e8de, his project of growing shiitake mushrooms on logs. He began this project\u2014The old way\u2014along with his two friends, J\u00e9r\u00f4me Boucher and Martin Gendron, both also from the area.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10487\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/IMG_2126-copy.jpg\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>In the shade of the farm\u2019s white pine plantation, under big tarps which hold<\/p>\n<p>moisture inside, there are hundreds of hardwood logs \u2014\u201ccut by us\u201d\u2014, maple, oak and ironwood, that the partners inoculated three years ago and which have begun to produce mushrooms since last year.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10488\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/IMG_2157-copy.jpg\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>\u201c<a href=\"http:\/\/tourismebrome-missisquoi.ca\/en\/blogue\/la-table-fermiere-of-la-brasserie-dunham-for-the-love-of-local-products\/\"><em>La Table fermi\u00e8re<\/em> of the <em>Brasserie Dunham<\/em><\/a> is one of our clients, along with the restaurant <em><a href=\"http:\/\/tourismebrome-missisquoi.ca\/en\/attraits\/where-to-eat-restaurants-larchipel\/\">L\u2019Archipel<\/a>,<\/em> in Cowansville,\u201d says Gabriel, \u201cwe are targeting different markets in Bromont and Granby and last summer, we participated in the <em>Foire Bio Paysanne<\/em> of Frelighsburg.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10495\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/La_Pinede-Recolte-2.jpg\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>Aside from developing new markets, the guys from <em>La Pin\u00e8de<\/em> are testing other mushroom varieties such as hedgehog mushrooms. They\u2019re thinking about also developing an indoor project.
