{"id":5225,"date":"2019-09-19T12:10:31","date_gmt":"2019-09-19T16:10:31","guid":{"rendered":"https:\/\/tourismebrome-missisquoi.ca\/la-table-fermiere-of-la-brasserie-dunham-for-the-love-of-local-products\/"},"modified":"2019-09-19T12:10:31","modified_gmt":"2019-09-19T16:10:31","slug":"la-table-fermiere-of-la-brasserie-dunham-for-the-love-of-local-products","status":"publish","type":"post","link":"https:\/\/tourismebrome-missisquoi.ca\/en\/blogue\/la-table-fermiere-of-la-brasserie-dunham-for-the-love-of-local-products\/","title":{"rendered":"La Table Fermi\u00e8re of La Brasserie Dunham: For the Love of Local Products"},"content":{"rendered":"<p>The <a href=\"http:\/\/tourismebrome-missisquoi.ca\/en\/attraits\/what-to-do-agro-tourism-brasseries-cider-and-mead-houses-brasserie-dunham\/\">Dunham brewery<\/a>, a prime, beer lovers destination in the region, is now offering its visitors a complete experience with its <em>Table Fermi\u00e8re<\/em> restaurant, where they can savour the best products of the region, prepared by Chef Luc Pinard.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10203\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/TF-1.gif\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>For Eloi Deit, one of the three owners, the idea behind La Table Fermi\u00e8re was to continue the project they started a few years ago as they established the brewery, the tasting room, the boutique and their third-floor lodging proposal: to revitalize <em>Le Relais de la Diligence<\/em>, one of the most beautiful historical buildings of Dunham.<\/p>\n<p>Eloi explains, \u201cThere used to be a restaurant in the space where we now find <em>La<\/em> <em>Table Fermi\u00e8re<\/em> and, when it closed, we immediately saw an opportunity to add a fine quality, gastronomical proposal to the experience we were already offering at our brewery. We were inspired by what we saw in Vermont at <em>Hen of the Wood<\/em>, a restaurant which adheres to the \u2018farm to table\u2019 concept. Our vision was to work as much as possible with organic products and local farms.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10206\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/TF-5_Pain-Maison.gif\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p><strong>When Your Neighbours Become Your Suppliers<\/strong><\/p>\n<p>Chef Luc Pinard never goes very far to purchase his organic vegetables with <em>Jardins du Pied de C\u00e9leri<\/em>, located just 750 metres from the brewery. <em>La Table Fermi\u00e8re<\/em> also collaborates with <em>Jardins de la Grenilette<\/em> in St-Armand and <em>Ferme des Quatre-Temps<\/em> in Hemmingford. <em>Capitaine Levain,<\/em> in Stanbridge-East, provides bread and the <em>Rheinthal farm<\/em>, <em>Abattoir Campbell <\/em>and <em>Selby Farm<\/em> supply all the restaurant\u2019s meat products; the Chef, in fact, takes great pride in being able to use any carcass, from snout to tail.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10204\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/TF-2.gif\" alt=\"\" width=\"800\" height=\"533\" \/><\/p>\n<p>The word collaboration is quite appropriate here, since the Chef works very closely with local producers in order to plan, for example, the right variety of seeds to plant for the vegetables he hopes to work with during the upcoming year. \u201cI asked Benoit of <em>Pied de C\u00e9leri<\/em> to plant some broccolini, parsnip, Savoy cabbage.\u201d The chef, while slicing Jerusalem Artichokes, is happy to confirm, \u201cWe will even have a section of the vegetable garden reserved just for us, to grow all our products! I always start with what is in season to prepare the dishes on our menu, which changes weekly. In fact, the menu clearly indicates where our food comes from. Plus, on a weekly basis, on the restaurant chalk board, we honour a local producer with a text presenting their work philosophy.\u201d<\/p>\n<p>Eloi asserts, \u201cIt is essential for us to be able to tell our clients where our products come from. It\u2019s important to highlight the fact that our dishes are made with local, organic products because this explains why they might cost a bit more than elsewhere; They will find high quality in the products we use as well as in the attention invested in transforming them.\u201d<\/p>\n<p>In fact, they hope that by savouring these fine quality dishes inside a \u201ccozy and relaxed\u201d atmosphere, their customers will be totally charmed.<\/p>\n<p>Eloi again explains, \u201cWe wanted to offer a high-end food selection within a friendly setting. We will welcome you whether you\u2019re wearing working boots or classic evening attire.
