With a theme entitled <em>Bouffe et Style<\/em>, the market will feature culinary arts, along with a wonderful array of delicious foodstuffs.<\/p>\n<p>The wide range of products you can get at the market include bakery, apple, maple products, jams and jellies\u2026and rabbit! Rabbit meat that comes in a variety of forms, thanks to <a href=\"https:\/\/www.facebook.com\/pg\/produits.jorick\/photos\/?ref=page_internal\">Produits Jorick<\/a>, a company based in Lac-Brome that has been in business since 2005. \u201cAs a retirement project, my parents, Johanne and Richard Gaudreau, bought some land and started raising rabbits,\u201d relates the couple\u2019s daughter, Jessica.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9687\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/Produits_jorick.jpg\" alt=\"\" width=\"707\" height=\"470\" \/><\/p>\n<p>Jessica\u2019s parents needed plenty of patience and perseverance to get consumers to take a liking to having rabbit meat on their dinner plate. \u201cIt took four or five years before my parents were able to build a steady clientele,\u201d says Jessica. \u201cWhen red meat started declining in popularity, rabbit meat came out a winner!\u201d But the real reason Produits Jorick\u2019s rabbits became a popular food item was, above all, because of the quality of the meat.<\/p>\n<p><strong>Well-raised rabbits\u2026! <\/strong><\/p>\n<p>\u201cOur rabbits are raised without hormones or antibiotics,\u201d assures Jessica who for the last two years has been involved in the business on a full-time basis. \u201cAnd every stage of production is done in an artisanal manner.\u201d \u00a0\u00a0In the Gaudreau family rabbit hutch, some 2,000 rabbits roam about. \u201cA big producer would have 15,000 or 20,000,\u201d remarks Jessica. \u201cBut our objective isn\u2019t to supply the IGAs, it\u2019s to provide specialty shops, public markets and, of course, the Christmas markets.\u201d Jessica is hoping to get even wider exposure for the business, but not at the expense of lowering the product\u2019s standard of excellence, and she is adamant about preserving the human-scale aspect of the business.<\/p>\n<p>If you browse around the Frelighsburg Christmas Market next Saturday or Sunday, stop at the Produit Jorick\u2019s kiosk and pick up one or several of their products, such as terrines, liver p\u00e2t\u00e9s, sausages and confits.
