{"id":5101,"date":"2019-09-19T12:09:52","date_gmt":"2019-09-19T16:09:52","guid":{"rendered":"https:\/\/tourismebrome-missisquoi.ca\/tips-for-a-successful-wine-and-cheese-pairing\/"},"modified":"2019-09-19T12:09:52","modified_gmt":"2019-09-19T16:09:52","slug":"tips-for-a-successful-wine-and-cheese-pairing","status":"publish","type":"post","link":"https:\/\/tourismebrome-missisquoi.ca\/en\/blogue\/tips-for-a-successful-wine-and-cheese-pairing\/","title":{"rendered":"Tips for a successful wine and cheese pairing"},"content":{"rendered":"<p>Now that the nice weather is upon us, it\u2019s the perfect time to sip a glass of ros\u00e9 wine on a terrace.<\/p>\n<p>It\u2019s sometimes hard to decide on what to serve with a ros\u00e9, especially a semi-dry ros\u00e9.\u00a0 At Ferme Guyon, where we were last weekend, a visitor introduced us to the perfect cheese to serve with our D\u00e9tente ros\u00e9.<\/p>\n<p>But before we get into that, let\u2019s take a look the rules to follow for a successful pairing of your wine and cheese:<\/p>\n<p>&nbsp;<\/p>\n<h3>1. Choose complementary products<\/h3>\n<p>You need to get products that you like and enjoy. Choose the wine first and let yourself be guided by these two basic principles:<\/p>\n<ul>\n<li>A mild cheese will be served with a light wine<\/li>\n<li>A sharp-aroma cheese will be served with a more aromatic wine<\/li>\n<li>A more aged cheese will pair with a coarse wine<\/li>\n<\/ul>\n<p>The cheeses you select should offer a nice contrast between the taste of the wine and the texture of the cheese.<\/p>\n<h3>\u00a0<\/h3>\n<h3>2. Preparation<\/h3>\n<p>Here are some tips for a pleasant, trouble-free tasting:<\/p>\n<ul>\n<li>Take the cheese out of the fridge about 30 minutes to an hour before tasting. \u00a0Cover the cheese platter with a damp cloth to keep the cheese moist and preserve its flavour and smoothness.\u00a0 \u00a0\u00a0<\/li>\n<li>The wine or wines should not be too cold because that won\u2019t help in being able to taste the flavours of the pairing. White wines and ros\u00e9s should be kept at 15 degrees Celsius while the red wines should be kept at room temperature. \u00a0<\/li>\n<\/ul>\n<h3>\u00a0<\/h3>\n<h3><b>3. <\/b><b>Tasting rules :<\/b><\/h3>\n<p>As it is for the wine tasting, there are certain steps to follow in the cheese tasting. You\u2019ll note that they are quite similar.<\/p>\n<h4>\u00a0<\/h4>\n<h4><b>Wine tasting;<\/b><\/h4>\n<ul>\n<li>Look at the wine\u2019s appearance (its colour, tears of wine)<\/li>\n<li>Smell the wine\u2019s aromas (bloomy, fruity, woody, \u2026)<\/li>\n<li>Taste and feel the textures (mild, dry, full-bodied, \u2026) and its flavours (citrus, flowers, complexity, \u2026)<\/li>\n<\/ul>\n<h4>\u00a0<\/h4>\n<h4><b>Cheese tasting;<\/b><\/h4>\n<p>Look at the colour and aspects of the cheese (washed rind, bloomy, surface-ripened,\u2026)<\/p>\n<ul>\n<li>Smell the aromas of the rind and cheese slice<\/li>\n<li>Feel the cheese\u2019s texture in your mouth<\/li>\n<li>Determine the cheese\u2019s savours and sensations: is it delicate, strong or sharp?\u00a0<\/li>\n<\/ul>\n<p>After a sensorial evaluation of the two products, you need to taste them together. It\u2019s the same principle as it is with a meal. It has a washed rind. Its rind has a fresh-straw and mushroom aroma. It gets very creamy and almost fruity when it melts in your mouth. It is both mild and tasty. There\u2019s a nice mildness to this cheese. It\u2019s the perfect cheese to go with D\u00e9tente ros\u00e9 which brings out all of the cheese\u2019s apricot aromas. The ros\u00e9\u2019s red fruit allows you to get a better sense of the fullness of the aromas and savours of the cheese. It\u2019s a pairing that provides a nice balance of flavours, which helps in enjoying the two products to the fullest.<\/p>\n<p>&nbsp;<\/p>\n<h4>Domaine Les Brome R\u00e9serve Vidal 2010 and Z\u00e9phyr cheese from Fromagerie Des Cantons<\/h4>\n<p><a href=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/vin.gif\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-4047\" alt=\"Vidal Domaine Les Bromes\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/vin.gif\" width=\"48\" height=\"214\" \/><\/a> <a href=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/fromage1.gif\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4051\" alt=\"Fromagerie des Cantons - Farnham\" src=\"https:\/\/tourismebrome-missisquoi.ca\/app\/uploads\/2019\/09\/fromage1.gif\" width=\"180\" height=\"181\" \/><\/a><\/p>\n<p>\u00a0There are sharper flavours in these two products\u2026 R\u00e9serve Vidal is a white wine, matured in oak casks for 16 months; there is a nice taste of vanilla, oak and fruits. Z\u00e9phyr is a firm cheese with washed rind. Its rind is beige and has an aroma of hay and nuts. It also has a stronger taste. Go ahead and bite into the cheese\u2019s rind, don\u2019t just leave it aside. R\u00e9serve Vidal is woody-type wine and that evokes the cheese\u2019s rustic side.
